It's a quick, easy, healthy way to add veggies to dinner and use up old ones you have in the frig.
Quick Veggie Bake
- 1 Tbsp plus 2 tsp olive oil
- Veggies, chopped - I used onion, red and yellow bell pepper, broccoli, a can of tomatoes.You could also use squash, carrots, potatoes, beans, corn, green beans, etc. etc. Whatever you have around will work.
- 1/4 cup bread crumbs
- 1/4 cup Parmesan cheese
- 1 cup shredded cheese
- Favorite seasonings to taste. Think I used basil, oregano, thyme, rosemary, salt and pepper, and probably Head Country.
