Recipe: Quick veggie bake

Got this out of Rachel Ray's magazine but changed it up for my particular style.

It's a quick, easy,  healthy way to add veggies to dinner and use up old ones you have in the frig.

Quick Veggie Bake
  • 1 Tbsp plus 2 tsp olive oil
  • Veggies, chopped - I used onion, red and yellow bell pepper, broccoli, a can of tomatoes.You could also use squash, carrots, potatoes, beans, corn, green beans, etc. etc. Whatever you have around will work. 
  • 1/4 cup bread crumbs
  • 1/4 cup Parmesan cheese
  • 1 cup shredded cheese
  • Favorite seasonings to taste. Think I used basil, oregano, thyme, rosemary, salt and pepper, and probably Head Country.
Preheat broiler. In medium pan, heat 2 Tbsp olive oil over medium high. Add raw veggies and seasonings and cook 8 minutes. Add canned veggies and beans with juices. Partially cover and cook 8 minutes. I guess if you are not using any canned veggies, at 8 minutes you could add some broth and cook another 8. Transfer to a baking dish. Mix bread crumbs, cheese and remaining olive oil. Sprinkled over veggies and broil until golden.
