Whatever-You-Have soup & Teriyaki meatballs

Here's tonight's supper. I don't have an official "recipe" for it, but I call it Whatever-You-Have-in-the-frig-freezer-and-cupboards soup. I make it every couple months when I'm stumped for anything else and I want something light but hearty, healthy, quick and easy.

Tonight's soup had this: 8 cups of water, 4 chicken bullion cubes, 1/2 of a Knorr tomato with chicken broth cube, 1 can of green beans, sliced up frozen zucchini's from father-in-law's garden, 3 potatoes, 2 handfuls of alphabet pasta, several small cut-up onions harvested from the day care in town before winter hit, 1 clove of garlic cut up, 2 cans of chunk chicken breast, and then salt, pepper, oregano, rosemary, basil, thyme, parsley and a splash of Head Country. YUM!

Here are some other ideas for this type of soup: diced tomatoes either fresh or canned, canned, fresh or frozen carrots, corn, mixed veggies, mushrooms, peas or beans (of any kind), bits of cooked crumbled bacon or sausage, meatballs, barley, rice, cauliflower, tomato sauce, other types of squash, okra, tortellinis, beef broth, onion soup mix. spinach leaves, hot sauce.

Anyway, be creative, you probably have the makings for a soup of this kind in your kitchen right now!

Easy Oriental Teriyaki Meatballs

This I haven't made but I found it online today at Spark People and it sounds wonderful!

Ingredients

    1 lb. 93% Lean Ground Beef
    1/2 cup chopped green onions
    2 tbsp. garlic powder
    1/3 cup teriyaki sauce
    3 tsp. chopped ginger root

Directions

All ingredients can be adjusted according to taste, of course=)
Preheat your oven to 350 degrees. Mix all ingredients in a bowl. Form 8 2oz. balls (for meals) or 16 1oz. balls (for appetizers). Place in a baking dish & bake 20-30 minutes. Enjoy!
