Easy crockpot chicken and rice



I wanted to make one-dish chicken and rice the other day, but needed to put it in the crockpot instead of the oven and found this recipe at About.com.

It turned out pretty well, but in the future I would add something to kick it up a notch, perhaps a little Italian dressing or Head Country seasoning or cooking wine or something.

Ingredients:

Boneless skinless chicken breast
1 can (10-3/4 oz) condensed cream of mushroom or cream of chicken soup
1/2 cup water
3/4 cup rice, uncooked
1-1/2 cups chicken broth
1 to 2 cups frozen green beans (I used mix veggies)

Put chicken in the crockpot. Add soup, water, rice and broth. Add green beans or veggies. Cover and cook on low for 6 hours (Mine probably went 8 hours) or until chicken is cooked and rice is tender.

  3. I really need to invest in a crockpot. I've seen all these great recipes that save time too. This one looks super delicious. Thanks for sharing. I think I would have added a bit more seasoning as well. I love cayenne pepper so that would have definitely gone in there :)

    1. Oh my gosh, it is one of my absolute favorite kitchen appliances!!!! So super easy. You can even make things like lasagne and fake apple pie. Even hard things are easy with a crockpot :)

    1. I totally agree. It's my favorite way to cook :) Except one time I turned it on high instead of low and I had REALLY well done pork chops. Oops.

  7. I keep adding to my cooking repertoire using Pinterest. So many good recipes. I've used the oven a few times recently and have regretted it. It's so hot here and my air conditioner can't keep up.

    1. I still haven't jumped into the world of Pinterest. Maybe one of these days :) And yes, in the summer, crockpot is a much better route!
