Fish foil packets

This is the easiest way I've ever found to cook fish.

Get a square of aluminum foil and my first tip is to spray cooking spray both on the pan you're going to cook them in and also on the bottom of the foil. Then place whatever veggies you want in the foil: carrots & potatoes (cut these very thin if they are fresh so they cook faster), squash, onions, corn, tomatoes, etc. Frozen veggies are the easiest.


Place a fish filet on top, I've used salmon, tilapia or swai. Season with whatever you like: garlic powder, basil, oregano, salt, pepper, paprika, etc. Put on a dollop of butter and a tablespoon of lemon juice.

Wrap up, bake at 400 degrees for maybe 20 mins and then check to see if done. It is light, flaky, juicy and good for you!
