Quick - like canned - chicken noodle soup

One of my favorite quick light snacks is my own homemade chicken noodle soup.

I've been playing around with it for awhile, trying it different ways and I have come up with one now that tastes a lot like the canned version you get at the store!

This was out of necessity when hubby was sick and desperately wanted chicken noodle soup but I had none.

So here's how it goes:

Quick chicken noodle soup

2-1/2 cups water
2 chicken bullion cubes (I crush mine first)
1-1/4 cup mixed vegetables (frozen or canned)
1/2 cup mini pasta

* You could probably add a little canned chicken or a few herbs too.

Throw it all in a pot and boil until the pasta is done, about 10 minutes.

These are the only ingredients.

My aunt sends these adorable alphabet noodles from California!
Plain old frozen mixed veggies.
The end result. Mmmmm.

  1. That is awesome, Steph! I have been making homemade soup for years, and using similar steps, but need to find those adorable letter noodles! My kids would love them! I dont suppose your aunt ships on demand, does she? *wink wink*

    1. I'm with Heather! I've been making homemade soups as well. I actually got mini alphabet soup in the ethnic aisle at Walmart, if that helps.

    2. Thanks for stopping by guys! I think nothing is better than homemade soup. You get so spoiled you can't even eat canned hardly! My aunt gets it at a specialty or health food type store there in California. My mom says she has looked in Florida and South Carolina and now Kansas and can't find them!

  17. Brings back sooooooooo many memories, however now I make chicken soup, sans the pasta - I should put spaghetti squash in there!! I cannot believe I have never tried that. WOO WOO - You just created a genius! LOL!
