I've been playing around with it for awhile, trying it different ways and I have come up with one now that tastes a lot like the canned version you get at the store!
This was out of necessity when hubby was sick and desperately wanted chicken noodle soup but I had none.
So here's how it goes:
Quick chicken noodle soup
2-1/2 cups water
2 chicken bullion cubes (I crush mine first)
1-1/4 cup mixed vegetables (frozen or canned)
1/2 cup mini pasta
* You could probably add a little canned chicken or a few herbs too.
Throw it all in a pot and boil until the pasta is done, about 10 minutes.
These are the only ingredients. |
My aunt sends these adorable alphabet noodles from California! |
Plain old frozen mixed veggies. |
The end result. Mmmmm. |
That is awesome, Steph! I have been making homemade soup for years, and using similar steps, but need to find those adorable letter noodles! My kids would love them! I dont suppose your aunt ships on demand, does she? *wink wink*
ReplyDeleteThanks for sharing, we will be trying it!

I'm with Heather! I've been making homemade soups as well. I actually got mini alphabet soup in the ethnic aisle at Walmart, if that helps.
DeleteThanks for stopping by guys! I think nothing is better than homemade soup. You get so spoiled you can't even eat canned hardly! My aunt gets it at a specialty or health food type store there in California. My mom says she has looked in Florida and South Carolina and now Kansas and can't find them!
DeleteMy favorite type of recipe - quick and simple. This is a great recipe to share this time of year. Thanks
ReplyDeleteThanks, Lisa. For the most part that's the ONLY type of recipe I use :)
DeleteI love things that are easy and fast. Something like this would be perfect on those nights when I have to run the boys around after school and I'm short on time.
ReplyDeleteYes, it's quick and easy and warms you up on cold nights! :)
DeleteLooks yummy and I love those little bitty alphabet noodles!
ReplyDeleteMe too! Aren't they just adorable! I tell my aunt to keep sending them!
DeleteI live chicken soup season! This looks tasty!
ReplyDeleteLoving easy recipes. Today would be a great day for homemade soup.
ReplyDeletewell that's easy enough for me to do. why was I thinking home-made soup was so complicated? this looks amazing and I do have a little sniffle right now so it would be great!
ReplyDeleteLOL, you sound like me :) If it's complicated, forget it! I love easy peasy lemon squeezy! Hope you feel better.
DeleteI wonder if there are gluten free alphabet noodles...I need to go look into that because my son would love this! :)
ReplyDeleteHmmm, I don't know. I'll just bet they make them somewhere!
DeleteSeriously, how do you come up with all these quick recipes. That sounds so simple and looks so delish, I may try it out myself. I love soup!
ReplyDeleteLOL, out of necessity! I'm short on time and have no patience for complicated recipes. So I find all the quick easy things :) Thanks so much for stopping by, Zan.
DeleteThis looks great and much healthier than the canned stuff! Love easy recipes like this!
ReplyDeleteThe canned stuff is usually too salty for me! I like when I can control what's in it.
Deletethose alphabet noodles are adorable. I usually have to concoct chicken noodle soup because I never seem to have any on hand when we get sick. thanks for sharing!
ReplyDeleteIt's not something I keep on hand like tomato or cream of mushroom, but as soon as someone's sick, where's it at?
DeleteI JUST got my toddler to eat chicken noodle soup yesterday for the first time, but it was store bought in a can. I can't wait to try this!
ReplyDeleteOh good, so fun when they try something new! Let me know if you try it!
DeleteHey what a great idea! I am the same way, I like to add fresh veggies to canned and/or packaged foods to up the ante a bit.
ReplyDeleteYes, get a little extra bang in the nutrient department :)
DeleteI have all of this at home now! I know what I'm making!
ReplyDeleteOh good! Let me know how you like it!
DeleteOh, that looks SO good! I pinned it, too!
ReplyDeleteThank you so much for pinning! I appreciate it :)
DeleteThat sounds really good! I''m going to pin it too!
ReplyDeleteThanks so much, Tammy! It's great cold weather quick food :)
DeleteBrings back sooooooooo many memories, however now I make chicken soup, sans the pasta - I should put spaghetti squash in there!! I cannot believe I have never tried that. WOO WOO - You just created a genius! LOL!
ReplyDeleteOh man, now that truly is a brilliant idea! Post it please so I can see how it turns out!
DeleteWhat a simple and quick meal! Easy to always have the ingredients on hand for it too!
ReplyDeleteYes! For some reason I never have actual chicken soup on hand, but the ingredients to make it, LOL.
DeleteChicken soup made with love is good for the soul - and colds! Great quick and easy recipe - thanks!
ReplyDeleteYou're right, love is the best ingredient of all :) Poor sick hubby is finally better.
DeleteGreat! Now I want some chicken alphabet soup. It snowed here in Colorado {shocker, I know} and that soup looks like it could warm us all up. Thanks for sharing your recipe.
ReplyDeleteBoy you guys have it cold over there! Here in KS it got down to 0 and our mountain friends in Colorado were in the negatives so I couldn't complain, ha! Hope you got some soup to warm you up!
