One of my go-to snacks when I am really hungry but don't want to have something with a lot of calories and want to be tided over until dinner (or lunch even), is a bowl of chicken broth with all sorts of stuff mixed in.
All I do is heat 1 cube of bullion in 1.5 cups of water, let it dissolve, pour it in a bowl and then add cut-up cooked veggies like broccoli, peppers, carrots, cauliflower or celery, canned or frozen veggies like corn, carrots, peas or green beans, canned or cooked tomatoes, a few pieces of potato, pasta, rice or beans, and then seasonings like salt, pepper, garlic, parsley, basil, thyme, oregano, rosemary, red pepper flakes, whatever you like.
Then add a dash of hot sauce and sprinkle of Parmesan and you have a hearty, large, flavorful, healthy, easy, quick, one-bowl soup with very few calories. Yay! You feel like you're splurging but you're really not.
