I put enough that it all stays in the meat (not runny) and any excess cooks out when you brown it. We have had great success with this. You could also add lemon juice and hubby has taken to throwing a shot of bourbon in there. It seems to take some of the wild flavor out. I marinate our deer steaks in more of the marinade, then fry them on the stove and oh my gosh they are fabulous! I use to hate it becaus...I adore home made pizza!! I use to hate it because when we were kids and living in Hawaii in the 60's while my dad was stationed there, just about every Friday we would all get in the station wagon and head to the drive in theater. My mom would make home made pizza and after eating that every week, I got a sour taste in my mouth. After we moved to the states and the pizza chains became big, it took me awhile to get back to eating pizza again. I never looked back!! *LOL*<br /><br />And you are right. Its much cheaper and you know what you are getting. I love to use turkey pepperoni when I make my pizza. Much less fat and tastes the same.
